I’m not the best cook in the world. Hell I used to burn water. Lately I have been getting more confident in my cooking abilities. Last weekend I made the fried green tomatoes and hush puppies, and 2 weekends before that I successfully made Chicken Parmesan.  So, my fears of burning down the house has been conquered and my faith in myself have been restored.

Green Tomatoes are just not ripe tomatoes. My boyfriend thought they were a different breed from the red tomato, at which I laughed in his face. Apparently all Hush puppies are is just deep fried cornmeal. Who woulda thunk it?

Yet again, I am proud of myself. So I blogged about it. Yay !!

Am I Normal ?

I know that I am … I think. The problem with normality is that no one truly knows what normal is. Being normal has to be specified to a person based on their personality. Everyone cannot be normal. If everyone was normal, we’d all be the same and that wouldn’t be munch fun.

Anyways … I ask this because of what I’m doing right now. Going to college is normal … ok I get that. Looking for a job is normal too. Wanting to be like Martha Stewart or a Stepford wife … is that normal?

I am currently living with my fiancee and I just want to be and do everything that a hose wife would have done in the 1940′s. I want to sew, embroider, make pies, have dinner ready when he comes home from work, you know … the usual.

I feel like this is what i should be doing. I don’t know if it’s because of my personality or if it’s because we’re finally living together. I have no idea what’s  on.

I have became more confident in my cooking abilities. I used to burn water. Yup, that’s right, BURN WATER. Now, I don’t. Lately I have mastered Hamburgers. Yeah, I know it’s easy to make but going from burning water to  making some yummy hamburgers, you’d be proud too.

On mother’s day I actually surprised myself … and no, I am not a mother (I wish I was tho). I made dinner for Grandma, aunt, fiancee and myself. It was GOOD !! I didn’t realize that water takes over an hour to boil though. I did realize that 2 handfuls of spaghetti from me wasn’t near enough to feed 4 people, but chicken is filling so it worked out. :D

Instructions are so:

- boil water in pot for Spaghetti, add noodles when water boiling

- Preheat Oven to 450

- Gather thawed chicken (breast or tenderloins is fine… I used tenderloins) wash and put on cutting board and cut into chunks.

- Gather flour, salt, pepper on shallow plate.

- Combine 2 eggs with 1 table spoon water in a wide bowl, beat until frothy.

- Heat 3 tablespoons of olive oil over medium high heat in large skillet

- lightly dredge both sides of chicken cutlets in seasoned flour and then dip them in the egg wash to coat completely (or vice versa).

- add cutlets to oil when it’s hot.

- fry for 4 minutes on each side until golden brown

- drain water from pot with cooked noodles, put noodles in  an oven safe container

- add tomato sauce to noodles, then the chicken chunks. Mix in together.

- Top with Mozzarella or Parmesan cheese

- place in oven for 15 minutes or until cheese is bubbly (ours only took 10 minutes).

- Enjoy :D

… p.s. Clean up is NOT fun…

Worth it though especially if someone close to you is not going to be here anymore in a few months.
